Since the beginning of his celebrated career, master Chef, hospitality entrepreneur and hotelier Charlie Palmer has received critical acclaim for his signature Progressive American cooking, a style built on rambunctious flavors and unexpected combinations with a deep and lasting infusion of classical French cuisine. Charlie Palmer’s upbringing on a farm in upstate New York, along with his education in various kitchens in France and at The Culinary Institute of America, provided him with the wherewithal to form this unique style and ultimately strike out on his own. In 1988, he made a significant commitment to creating dishes featuring regional American ingredients at his sublime Aureole, originally situated in a historic townhouse off Manhattan’s Madison Avenue and now in a spectacular new location in the heart of New York City’s radiant theater district.
Over the years, Palmer combined his creative cooking spirit and flair for business to open dozens of notable restaurants across the country, award-winning boutique hotels and a growing collection of food-forward wine shops. These include: Michelin-starred Aureole, café/catering venue Astra in New York; Charlie Palmer Steak, Washington, D.C.; Michelin-starred Aureole at the Mandalay Bay Resort & Casino, and Charlie Palmer Steak at the Four Seasons, Las Vegas, NV; Charlie Palmer Steak and Briscola in Reno, NV; Dry Creek Kitchen at his boutique Hotel Healdsburg, Sonoma County, CA, as well as Charlie Palmer at Bloomingdale’s South Coast Plaza, Costa Mesa, CA, which houses Palmer’s Next Vintage wine shop and his first quick and casual burger restaurant, DG Burger (Damn Good). Palmer also jointly owns two hotels in the Bay Area with his Palmer City-Core partners, Mystic Hotel by Charlie Palmer (San Francisco), CA and Harvest Inn by Charlie Palmer (St. Helena, CA).
In Summer 2014, Palmer and his team launched a new bar concept called Crimson & Rye in midtown Manhattan that focuses on craft cocktails, small batch ryes and whiskeys and bar dining over shared plates in Palmer’s progressive American style. In addition, Palmer is planning several other New York ventures opening in late 2014: Upper Story by Charlie Palmer, Charlie Palmer Steak and a café, restaurant and rooftop bar and lounge in the forthcoming Knickerbocker Hotel.
A 20-year board member of Citymeals-on-Wheels and longtime supporter of Share our Strength, Chef Palmer and his namesake restaurant and hotel group frequently give back to the community with their trademarked, signature events. A weekend long food and beverage experience at the Hotel Healdsburg, Pigs and Pinot is an annual celebration of Sonoma County Pinot Noirs and acclaimed national and local chefs combining their star power and talents to raise serious funds for local Sonoma charities and Share our Strength.
A member of James Beard “Who’s Who of Food & Beverage in America,” inducted into the casino community’s Gaming Hall of Fame in 2011 and named Chairman of the Board of Trustees of the Culinary Institute of America in 2012, Palmer is a respected and admired hospitality figurehead. A frequent guest on NBC’s Today Show, Charlie Palmer is also the author of five cookbooks, Great American Food (Random House/1996), Charlie Palmer’s Casual Cooking (Harper Collins/2001), The Art of Aureole, (Ten Speed Press/2002), Charlie Palmer’s Practical Guide to the New American Kitchen (Melcher Media/2006), and Remington Camp Cooking by Charlie Palmer (Charlie Palmer Group/2013).
Elite Wine Pairing Vintners
Kosta Browne, Sonoma County, California
Kosta Browne began as a dream shared by Dan Kosta and Michael Browne. In the Summer of 1997, while working at John Ask & Co, restaurant in Santa Rosa, CA, they decided to venture into winemaking. They saved enough tip money for about eight months and eventually had enough to buy a half ton of Pinot Noir, a used barrel and an old hand-crank stemmer-crusher, a purchase that marks the beginning of Kosta Browne. Since that vintage, they are nurtured relationships with the best growers and honed their winemaking skills, making sure to focus on the vision and values with which they began.
All other Elite Vintners paired during dinner courses have been hand-selected by Dan Kosta, Kosta Browne

Double Back Winery. Walla Walla Valley, Washington – NFL Legend, Drew Bledsoe and Chris Figgins, Winemaker
Chris and Drew grew up a stone’s throw from each other, some 400 yards from the Leonetti Cellar Estate in Walla Walla. After high school, they both went on to pursue their own ambitions and personal successes. The two reconnected in early 2007 when Drew made the decision to enter the wine business. After much research, Drew decided on his hometown of Walla Walla as his first choice for his vineyard and winery location. Chris was certainly at the top of Drew’s list for a consulting winemaker but was unsure of Chris’ interest outside of Leonetti Cellar. The timing was very serendipitous as Chris had just started Figgins Enological and was looking for the perfect client for his first consulting collaboration. Chris, having a very high respect for Drew, seriously entertained taking on Doubleback as his client and their business relationship became official in the spring of 2007 just as Drew announced his retirement from the NFL. Chris consults on all winemaking and viticulture practices as well as assisted in the vineyard design and planting for McQueen, Drew’s estate vineyard in the Walla Walla Valley. It is a true collaboration from dirt to bottle.
